Cabinet wood for the Ohio Valley: which Kentucky hardwood stays flat in an Owensboro kitchen

Owensboro sits in the middle of the best hardwood country in the United States, and a kitchen built here can use wood that grew on the hills you can see from the Natcher Bridge. The catch is the climate that grew it. This guide covers how wood moves, why the shop lets it sit before cutting, what each species does over the years, and which parts of a cabinet should be solid wood at all.

What does the Ohio River climate do to cabinet wood?

Wood swells in humid air and shrinks in dry air, and an Owensboro kitchen gives it both every year. From May into September the river valley runs humid enough that a door can pick up moisture for weeks. Once the furnace comes on, indoor air drops to desert-dry until March. A solid wood panel can change width by a noticeable fraction of an inch across that swing, and a cabinet built without room for the change will crack a panel, bind a door, or split a face frame.

Why does wood move, and which way?

Wood moves across the grain, and barely at all along it. A board that is 8 inches wide will get wider and narrower with the seasons; its length stays put. How much it moves depends on how the board was cut from the log. A plain-sawn board, with the growth rings running roughly parallel to the face, moves about twice as much across its width as a quarter-sawn board, where the rings run perpendicular to the face. That is the whole reason quarter-sawn white oak is prized for cabinet doors and for the barrel staves stacked at the distillery downtown: it stays flat.

The cabinetmaker’s answer to movement is the floating panel. A shaker door is a frame of two stiles and two rails, joined at the corners, with a center panel sitting in a groove and not glued. The panel can expand and shrink inside the frame all year while the frame, which is narrow and barely moves, keeps the door square. Look at an old door in a humid August and you can sometimes see a faint line at the edge of the panel where it has pushed out; in February it pulls back. That is the door working.

Does kiln-dried lumber still need to acclimate?

Yes, and this is the step that separates a shop from a truck. Kiln-dried hardwood leaves the mill at a moisture content meant for indoor use, but it then sits in a warehouse, rides in a trailer, and arrives at the shop somewhere else on the scale. A cabinetmaker stacks it with stickers between the boards, in the shop where it will be cut, and lets it settle for a couple of weeks. A moisture meter says when it is done. Cut before that, and a door glued up flat in the shop can cup by the time it is hung in your kitchen.

Two weeks on stickers sounds like nothing. It is one of the reasons a custom kitchen takes six to ten weeks and a big-box order takes whatever the shipping says.

Which Kentucky hardwoods are used for cabinets?

Kentucky and southern Indiana grow almost every species a cabinet shop wants, and a shop here can buy most of them from mills within a hundred miles. Each one behaves differently.

White oak is the barrel wood. It is hard, closed-grained enough to hold water (which is why it holds bourbon), and quarter-sawn it shows a ray fleck that no other domestic species has. It stays flat, takes a stain evenly, and looks right in a 1920s house and a 2020s one. Plain-sawn white oak is the mid-cost option; quarter-sawn costs more because a log yields fewer of those boards. Cherry is the furniture wood of the Ohio Valley. It starts a pale salmon color and darkens over its first year to the deep red-brown people picture. It works beautifully, takes a clear finish better than a dark stain, and is a little softer than oak, so it dents where a chair back hits it. Expect a cherry kitchen to look different in a year than it did on install day; that is the point of it.

Hickory is the hardest of the group and the busiest to look at, with wide swings from cream sapwood to brown heartwood on the same door. It moves more than oak with the seasons and is hard on tooling, so it costs more to work than its lumber price suggests. Rustic kitchens and mudroom benches wear it well.

Hard maple is dense, pale and even. Stained, it can go blotchy unless the shop conditions it first. Painted, it is one of the two standard choices, because the fine grain does not show through a sprayed paint the way oak’s does.

Poplar is the other paint-grade wood. It is soft, cheap, straight, and greenish in the raw, and none of that matters once two coats of catalyzed paint are on it. Most painted face frames and door frames in this county are poplar or maple, and the choice between them is usually the shop’s habit rather than a quality gap.

Walnut is the premium. Dark, stable, and expensive, because the good logs go to furniture and veneer buyers first. A walnut island in a painted kitchen is the Griffith Avenue move. Movement ratings are relative to each other, not a measurement; any of them is fine in a floating panel built by a shop that let the lumber settle.

Should the whole cabinet be solid wood?

No, and asking for it will get you a worse cabinet. Solid wood belongs where it can move freely: the door frames, the floating panels on stained doors, the face frames, the drawer boxes, the edge banding and the trim. The box itself, the sides and top and bottom and back, should be plywood.

A solid-wood box side is a wide panel screwed at all four edges to other wide panels. It cannot move, so it splits. Plywood is layers of veneer glued with the grain alternating, which cancels the movement out; a three-quarter-inch hardwood plywood side stays the same size in August and February, holds a screw, and does not sag under a shelf full of plates. What about painted doors and MDF?

A painted shaker door with a solid wood center panel will, in this climate, eventually show a hairline crack in the paint where the panel meets the frame. The panel moves, the paint does not, and the line appears at the joint. It is not a failure and it is not the painter’s fault; it is August.

The fix most shops use now is a center panel of MDF, a dense fiberboard that does not move with humidity, inside a solid poplar or maple frame. Painted, it is indistinguishable from a solid panel and it stays clean at the joints for years. On a stained door MDF is out of the question, because there is no grain to show. On a painted one it is the better material, and a shop that suggests it is telling you the truth about the river.

How do you pick?

Decide paint or stain first, because it settles half the question. Painted kitchens are poplar or maple frames with MDF panels, and the species stops mattering. Stained kitchens come down to the look you want and how much movement the room will see: quarter-sawn white oak and cherry for the calmest doors, plain-sawn oak for the classic look at a lower price, hickory if you want the variation and can live with a little more seasonal play, walnut if the budget is there.

Then ask the shop two things before you sign. Where does the lumber sit before it is cut, and for how long. And whether the boxes are plywood.
